Chicken & Sweet Potato Rogan Josh – Recipe of the Month – March

Great for the bain-marie and buffet style set ups, this spicy chicken & sweet potato rogan josh recipe can be served with either rice or naan bread for a filling main course. Using the UNCLE BEN’S® Rogan Josh Sauce this dish can be held for up to 2 hours in a bain-marie with no loss to quality, making those lunchtime serving periods easier than ever!

 

Chicken & Sweet Potato Rogan Josh Recipe:

10 Portions Ingredients
1kg UNCLE BEN’S Rogan Josh Sauce
250g Long Grain Rice
1.3kg Chicken Breast sliced
300g Onions – diced
10g Garlic – finely diced
800g Sweet Potato – diced
300g Carrots – cooked and sliced
200g Button Mushrooms
300g Spinach (frozen)

How to make Chicken & Sweet Potato Rogan Josh:

  1. Heat the oil in a large pan
  2. Sauté the onions and mushrooms for 2- 3 minutes before adding the garlic and chicken pieces – cook for 10 mins until browned
  3. Add the sweet potato, UNCLE BEN’S Rogan Josh sauce and 100ml water and mix well – 5 mins
  4. Bring to a simmer and cook for 15-18 minutes, until the sweet potato is tender and the chicken is cooked
  5. Stir in the spinach and simmer – 2 mins
  6. Serve with Rice
